Terroir Svätý Jur

Terroir is a place where wine was born. It is connection of geology, climate, variety, tradition and the human mind into a single unit - wine. Terroir Svätý Jur is unique with granite bedrock, light sandy and stony soils, mostly south-facing slopes and over a thousand years of history of viticulture.


Organic vineyards

Our vineyards are over 40 years old. They are organic, we do not use chemical pesticides. In the vineyards we are trying to promote his own vine immunity. To protect against diseases we use preparates approved for organic production. We support biodiversity, which gives rise to the natural balance in the ecosystem vineyard. The reward is a multicolored blooming vine, number of butterflies and most high-quality and healthy grapes.


Authentic wines

Wines ferment spontaneously without the use of commercial yeasts and advanced additives. Before fermentation the must is macerated on skins 2-3 days, sometimes longer. We have typical Small Carpathians varieties: Muller Thurgau, Veltliner, Riesling and few bottles of Sauvignon blanc. Red varieties are Merlot, Cabernet Sauvignon and Alibernet and ferment on skins 20-30 days and then aged in wooden barrels.


The story of wine

We start with a winter cut. This is followed by "green works" - removing unnecessary vine growths and cleaning pimples. In early June the vine blooms. Depending on the weather, we choose sprayings approved for BIO production. In September, the Muller-Thurgau matures and gradually Veltliner and rieslings. Reds are picked in October. Fast transport to the cellar, flaking, lying on the skin and hand pressing. Followed by spontaneous fermentation 3-6 weeks ...
